Dustin trained at Le Cordon Bleu in Scottsdale and cooked in kitchens at NASA's Johnson Space Center before he and Gina opened their own place. Eji's keeps weekday daytime hours, open for lunch Monday through Thursday and staying open into the evening on Fridays, closed on Saturdays. That schedule means it was never competing with the Feed Store's evening crowd or the fair's night shows in the first place.
